Chef Pilon's culinary evolution began with traditional French cuisine in Lyon under the guidance of Christian Têtedoie, followed by a more technical approach at the Villa Florentine. His journey led him to Le Louis XV, where he honed his skills in working with the finest ingredients. A pivotal moment came in 2015 at the Plaza Athénée in Paris, where he embraced natural cuisine, starting from a blank slate to create innovative dishes.
